  • 2 pints cherry tomatoes
  • 8 oz feta cheese block
  • 1/3 cup olive oil
  • 3-4 garlic cloves
  • 12 oz pasta penne or fusilli
  • salt and pepper to taste
  • fresh basil optional, for garnish

  • spinach handful, for added nutrients
  • chili flakes for a spicy kick
  • Kalamata olives for a briny touch
  • grilled chicken, shrimp, or sausage for added protein

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and dry the cherry tomatoes, then place them in a baking dish along with the block of feta cheese. Drizzle olive oil over the top, ensuring everything is well-coated. Add the garlic cloves (leave them whole) and season with salt and pepper. Optionally, sprinkle chili flakes for extra heat.
  • Bake in the oven for 25-30 minutes, or until the tomatoes are bursting and the feta is soft and golden.
  • While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  • Once the feta and tomatoes are done, remove from the oven and stir gently to combine the melted feta and burst tomatoes into a creamy sauce.
  • Toss the cooked pasta in the sauce, ensuring it is evenly coated. Garnish with fresh basil if desired, and serve immediately.

Notes

Use high-quality feta cheese for the best results. Avoid pre-crumbled feta as it may not melt properly. For a healthier version, consider using whole wheat pasta and adding more vegetables like spinach or roasted zucchini.
